Coconut Macaroons

A sweet treat that would not insult your blood glucose levels or wreak havoc in your gut. These golden-brown globes are so quick & easy to make, you'll want to have a batch made every week during your meal prep.


Prep time: 5 min

Cook time: 20-22 min


Ingredients:

3 cups unsweetened shredded coconut

1/4 cup maple syrup

5 egg whites (use the yolks for other recipes)

1-2 tsp vanilla extract

1/4 tsp sea salt or pink salt


Directions:

  1. Preheat oven at 350 deg

  2. Have a baking tray or sheet lined with parchment

  3. Mix all ingredients thoroughly in a bowl

  4. Scoop out 1 tbsp size balls and line them up on the parchment

  5. Bake at 350 deg for 20-22 min or until you see your macaroons turn golden brown

  6. Remove from the oven and let them cool for a few minutes



Enjoy warm or cold with your favorite warm beverage!
