Broccoli Korma

I am loving everything broccoli lately! We all used to hate broccoli as kids. But as we get wiser, we start to enjoy the foods we disliked. Even if you are not a broccoli fan, with the right ingredients, this dish is a palatal delight!

Prep Time: 10 min, Cook Time: 30 min on stove top, 5 min on Instapot
Ingredients:
1 cup broccoli florets
3 white potatoes - cut into cubes
1/2 cup shredded carrot
1/2 - 1 large purple onion - diced
1 small green chilli - diced
1 can of coconut milk
1 - 2 cups water
1/2 tbsp coconut oil
1/2 tsp turmeric
1/2 tsp cinnamon
1/2 tsp nutmeg
Pink salt and pepper to taste
Cilantro for garnish
Instructions:
- In a sauce pot, start with warming up the coconut oil on medium heat, then saute' the onions until they have caramelized
- Add in the all the veggies and spices, and give it a mix
- Gently pour in the coconut milk and fold in all the content
- Add 1 cup of water, cover the sauce pot with a lid and let it cook for 10 min
- Add extra water if needed and cook till potatoes become tender
This dish is perfect with some rice, naan or pita! it is easy on the stomach and great as a detox recipe!
