Epic Noodles recipe

I can have noodles EVERYDAY if I could and I make them almost once a week. This is a staple recipe and what is most exciting is I have made it vegan and gut friendly! I hope you enjoy as much as I do!

Ingredients (Servings: 1)
Stir Fry
1 block of extra firm tofu cut into cubes
1 brick of ramen noodles
1 small onion chopped
4-5 cloves garlic minced
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1 tbsp oil (I used avocado - but sesame oil would be great)
Salt & Pepper to taste
Sauce
2 tbsp tamari
1 tbsp sambal oelek
1 tbsp maple syrup
1 tbsp rice vinegar
Optional Garnish
Green onions or cilantro
Lime wedges
Directions
- In a bowl or a container mix all the sauce ingredients & set aside
- Heat your wok or pan with 1/2 tbsp of oil
- Add the tofu, salt and pepper to taste and cook till the cubes are golden brown. Remove from wok and set aside
- Add the remaining oil and cook the remaining veggies (garlic, onion, peppers)
- While the veggies are cooking, get your noodles ready according to package instructions, drain and set aside
- Once the veggies are cooked, add the tofu & noodles to the pan, pour in the sauce and give it a good toss
- Cook until the sauce is well combined and has coated the veggies, tofu & noodles (1 - 2 minutes)
- Serve in your favorite bowl, garnish with green onions & lime wedges
